Note from Dan: Here’s some information about Lori, the poster of the 80,000th comment on this blog. The picture on the left is of the sunrise the day her son was born in 2008.

“A little about me: I am 34 and have lived in Roanoke all my life. I graduated from Roanoke College, and briefly considered moving elsewhere after graduation, but my friends and family kept me here. Lucky for me they did, or I wouldn’t have met my wonderful husband.
We married in 2007 and welcomed our son 9 months later, in July 2008. (We had a great honeymoon!) I have truly been blessed to have a husband who loves me, faults and all, and to have a healthy happy son who never ceases to amaze me.
I work for two attorneys, whom shall remain nameless. I enjoy what I do as it’s a small office and I get to work on many different cases but also assist on the business end of things.
My politics lean liberal, as evidenced in my commentary on the blog. That being said, I believe most solutions lie somewhere in the middle of the political spectrum – the market doesn’t have all the right answers nor does the government.
I love to read and cook in my spare time. This year, I am looking forward to learning to preserve some of the veggies from our garden.”




Having seen Lori’s son, it’s fitting that the day of his birth started out beautifully. A beautiful day to welcome a beautiful boy to the world.
Thanks for sharing Lori, you are a welcome presence here on the blog and we are lucky to have you. Children have a way of putting the whole world into a very different perspective, enjoy the journey, in no time he will be grown. (Which will have its own rewards too, but the house will never be the same). My son recently turned 26 and I still miss seeing him daily.
Oh, she works for lawyers. That explains a lot.
Nice story, Lori, and I appreciate your presence on here. Maybe we can get together this summer and you can show me how to can so I don’t kill my family with botulism! (my older son’s prediction)

Sandi, you are right about time flying. I can’t believe he will be 3 this year, and he’ll be off to college before we know it.
Kristen, my showing you to can would be like the blind leading the blind. I’ve never done it, but I want to learn. I’ve got a good preserving book, and if you’ve got one maybe there’s hope for us!
Oh three is such a precious age! I am green with envy and remembering my sweet angel at that time too.
That is my greatest fear in learning to can too. My mom was after me for years to come help her and learn how, but I confess, I am afraid to try. Good luck brave ladies!
The only thing I have canned is jam and peach butter. No fatalities or sickness suffered by anyone.
Make sure your jars/lids are clean (Iuse the dishwasher) and they stay in the water bath long enough and seal properly after cooling. Go by the directions in the canning books. My mom used to can w/a pressure cooker. Scares me to try!
I have made strawberry freezer jam and used plastic Ball containers, which I washed in the dishwasher first. I also froze some peas I bought from the Market last year. When my boy was a baby, I pureed peas, carrots and apples for him, then froze those. These have been my only attempts at food preservation thus far.
I got some delicious sweet & spicy relish from a farmer through Runnerbean.com. My husband said we should try making our own, which I’d love to do! First though, I think I should learn how to preserve the stuff!

Peach butter does sound delicious. Freezer jam is great. I have never done it, but I never turn down a jar when offered. I love the country store on 460 for some of those great old timey tastes. My sister uses the one in Boones Mill too. Thank goodness for places like that and Mom or I might not get any of those great treats.

Lori, I made peach butter because my first and only, so far, attempt at peach jam, resulted in jam that was a little runny. It was good, just a little loose. I decided to make peach butter with the next batch of peaches I had. I just cooked the peaches slowly, stirring until they had the same texture as apple butter would. Since I wasn’t using pectin, I didn’t need to follow the directions for a certain amoount of sugar. I added less sugar than I used in the jam and some lemon juice to keep the peaches from turning brown. It ended up being sweet with a little tang to it.
