A coworker I had years ago, always made turkey and dumplings for thanksgiving instead of a roasted bird. She said one of her daughters wanted her to try it once, and it became their tradition.

Okay, I have a lot of mashed potatoes left. If you have any good leftover recipes for mashed potatoes, let me know! I saw a recipe in one of my food magazines for something like fried potato cakes, but I can’t find it now. My husband says the problem is that I get too many food magazines. Is that even possible?
Michelle, Shepherds Pie is always a good way to use up leftover mashed potatoes…and other veggies if you have them leftover too. Just mix up the veggies with browned ground beef and tomatoes, put in a pie pan and top with mash potatoes and some shredded cheddar. Voila! Excellent non-poultry post-Thanksgiving comfort food.

@Michelle: I don’t know if this is what you were thinking about, but if you take leftover mashed potatoes (I like to mix them with chopped cooked spinach or other greens), form them into little cakes, and fry them, they’re pretty delicious. Depending on the texture of your mashed potatoes, you might want to add something to hold them together (breadcrumbs, etc.)
They’re great on their own or with any variety of sauce (especially a smoky barbecue sauce!)
Michelle, sorry about the delay – you’ve probably gotten rid of those mashed taters by now. But here’s another idea that I came across just before Thanksgiving: make potato soup! You could add some chicken (or turkey) broth, some milk or half-and-half, some sauteed leeks and maybe even boil a few potatoes and cut them up to add texture. The mashed potatoes will thicken the soup for you and add nice flavor. And why not add cheese, too?
