I’m giving away a nice one today for anyone who has used the Weight Watchers diet or would like to try some of those recipes. This is the Weight Watchers “New Complete Cookbook” with more than 500 recipes.

The 16 chapters in this book include breakfasts and brunches, starters and light meals, salads, soups, meats, slow-cooker classics, breads, baked desserts and frozen desserts. I am going to share a recipe for slow-cooker Kielbasa and bean soup. If you are interested in winning this cookbook for yourself or for a holiday gift, leave a comment on this blog entry. Slow-Cooker Kielbasa and Bean Soup
Serves 8

3/4 lb. turkey kielbasa, sliced
1/2 bunch kale, trimmed and chopped (about 4 cups)
1 onion, chopped
1 carrot, chopped
1 celery stalk, chopped
2 garlic cloves, minced
3 cups reduced sodium chicken broth
1 (15 1/2-oz.) can red kidney beans, rinsed and drained
1 (15 1/2-oz.) can great Northern beans, rinsed and drained
1 (14 1/2-oz.) can diced tomatoes
1/2 cup dry red wine or water
1 tsp. dried basil
1/2 tsp. dried oregano

Combine all ingredients in 5- or 6-quart slow cooker. Cover and cook until vegetables are tender, 4 to 5 hours on high or 8 to 10 hours on low.

Nutritional information per 1-cup serving: 329 grams, 159 calories, 4 grams total fat, 1 gram saturated fat, 0 gram trans fat, 28 mg cholesterol, 797 mg sodium, 19 g total carbs, 5 g total sugar, 6 g fiber, 13 g protein. PointsPlus value: 4

    Weight Watchers is great! They promote healthy eating and it does work if you follow it. I’ve been trying and this cookbook would be great for new ideas!

    Mmmm…always good to see a healthy recipe during this time of year! I was just remarking this morning that if I went to all the various holiday socials, lunches, brunches, etc. that various departments have invited me to where I work…I’d explode by Thursday!

    I believe I’ll be needing something like this by the time Christmas rolls around…or, er, by the time I roll around to Christmas? :-/

    oh wow this cookbook looks like it will have alot of yummy and nutrious recipes in it. for being over weight myself and my husband having high cholesterol this just might be the answer to finding good and tasteful meals. The displayed recipe looks awesome.
