For Valentine’s Day, that one dish would have to be… something chocolate… there are so many wonderful things to choose from. One year he baked me a chocolate cheesecake from scratch!

Thanks for the recipes, Lindsey. I was surprised to note that the Mint Chocolate Pots de Creme from a diabetic cookbook gave sugar count instead of carbohydrates since carbs are what diabetics have to count.
Hmm. That is interesting. And I’ve given that book away in a contest since then, so I can’t check it. My apologies.
Wait a sec, Vickie! I do still have this cookbook. And it looks like my error when I entered the recipe in the database. The book does provide additional info, which I have added to the recipe now. But the quick answer is that the recipe contains 16 grams of total carbs.

If my Sweetie fixed me anything other than scrambled eggs or spaghetti (the extent of his cooking expertise), it would win my heart. Of course, I am not complaining – our arrangement is I cook, he does the dishes, so not a bad deal!

My sweetie could win me over with macaroni and cheese any day. But it would have to be good mac ‘n’ cheese. That or an apple pie.
Thanks for the carb info, Lindsey! It’s probably surprising for anyone who isn’t familiar with diabetic cooking to learn that the carbohydrate count is what has to be watched. You automatically think sugar grams, but carbs turn into sugar in the body. Keep up good work, Lindsey! I really enjoy Plateup.
