Announcing ticket winner later today

I know everybody who entered to win tickets to the Celebrity Chef Tour dinner at The Palisades in Eggleston is eagerly waiting to hear whether their name was drawn.

I am going to allow Palisades owner Shaena Muldoon to pick the winning number today, and will announce the winner before the end of the business day. So stay tuned!

Meanwhile, let’s have an open thread about what we cooked over the weekend. I wonder if you, like me, took advantage of the cool, rainy weather to do some roasting or baking. It occurred to me that it might have been one of the last weekends when I could comfortably crank up the oven.

I had friends over Saturday and we made chicken Marsala with roasted potatoes and grilled asparagus, along with a wonderful chocolate cake (I’ll have to share that recipe later this week). Yesterday, I made a nice pot roast with mushrooms and lots of sweet onions. Yay for leftovers!

    I made my mom’s Texas Chocolate Sheet Cake recipe over the weekend. I accidentally knocked the air bubbles out of the batter before putting it in the oven, so it actually turned out more like brownies than cake, which was a fun surprise.

    I’m excited to know the recipe can pull double duty now :D

    John, the cake I made was like a Texas sheet cake but it was a lot easier to make. Not that sheet cakes are hard, but this had fewer ingredients and went together in a snap. I’ll post the recipe soon.

    Saturday night we had a to-die-for ribeye steak fixed in a cast iron skillet with oven baked potatoes and argula with a homemade lemon juice/garlic/olive oil dressing. Yesterday we had 15 bean soup over rice.

    Lindsey…i’ve got a totally random question. Do you know of any canning classes that might be going on in our area?

    Daisy, I have not heard of any upcoming classes, but you might want to check with the Virginia Cooperative Extension to see if they know of anything. Maybe they know of a class at the Brambleton Center or would be willing to put one together if enough people are interested. The Roanoke number is 772-7524.
    I’ll keep my ears open for any additional info.

    Saturday night was a homemade white pizza night for my husband and me. After the dough making process and the rising, I sprinkled coarse kosher salt and granulated garlic on the dough, followed by low moisture mozzarella torn into pieces, oil and herb marinated sun-dried tomatoes and minced oregano, basil and thyme, then finished with baby arugula when it came out of the oven. Delicious! Sunday we had a nice dinner at Red Lobster to celebrate my daughter-in-law’s birthday and I shared a seafood platter with my grandson. Yesterday I made taco meatloaf for my parents and for us, served with a garden salad, oven roasted asparagus tossed in a bit of oil, salt and herbs and brown rice with raisins, cranberries and bits of apricots.
