I’ve given away some great prizes on this blog, but this might be the most exciting opportunity ever. Shaena Muldoon, owner of The Palisades Restaurant, has generously offered us two tickets to the Celebrity Chef Tour dinner at the restaurant later this month.
This dinner will feature the handiwork of five extremely talented chefs, including past contestants on Bravo’s “Top Chef,” Esquire magazine’s 2009 “Chef of the Year” and Roanoke’s own Aaron Deal, who was a semi-finalist for a prestigious James Beard Award in 2009. The celebrity chefs will be cooking at The Palisades for two nights in a row, Friday and Saturday, March 30 and 31. This contest prize is for tickets to the event on Saturday, March 31. Tickets cost $140 per person, so this is a prize valued at close to $300. They will be will-call, so Shaena will have the winners’ names and you won’t have to worry about getting them through the mail. The tickets are transferable, so if you win but cannot go you can send friends or family in your place.

One of my favorite celebrity chef’s is Alton Brown. I love that he shows simple ways to do things that anyone can do.
One of my favorite recipes was a cheesecake recipe. He uses a water bath to keep the cheesecake from falling. I always had issues with that until seeing him do this.

Wow! What an exciting contest. Lindsey, I’m a huge fan of your column but a first time commenter! I couldn’t resist this opportunity. I would have to say that my favorite celebrity chef is Jamie Oliver. I find his commitment to reforming food served to children in schools very admirable and important. Also, as a student who is strapped for time and money his 30 minute meals recipes are great for my time constraints and many of them are budget friendly as well. My favorite celebrity chef is Emeril Lagasse. I really love Emeril for bringing me back to cooking after not doing it for years. And for teaching me so many great techniques, and about foods I’ve never tried. His love for all things food, shines through in everything he does. I had the please to visit his restaurant in Atlanta, and it was everything I’ve dreamed of and more. Although it is hard to choose just one, I would say that my favorite celebrity chef would be Rick Bayless. Rick’s approach to Latin and Southwestern foods is refreshing, as he recreates foods as they would be found in homes of their respective regions, not Americanized versions of the dishes.

Before getting married I never was a “foodie”, but after being married for over a year that has all changed. My wife is an excellent cook and has turned me on to shows aired on Food Network (i.e. Chopped, Worst Cooks in America [me], etc.). Over time, I’ve grown to like chefs like Bobby Flay, Geoffrey Zakarian, Alex Guarnaschelli, Aaron Sanchez and many others. However, the one chef that stands out, for me, is Anne Burrell. The attached recipe, albeit small/simple, reminds me of my first time cooking for my wife. Remember folks, having never been a “foodie” made preparing dinner for my wife, the excellent cook, for the first time, quite the daunting task. Anne made my experience fun and showed that cooking doesn’t have to be intimidating.
As a side note, brussels sprouts weren’t the only item on the menu!

One of my favorite celebrity chefs of the moment (I have so many!) is Richard Blais, from Top Chef. He is so innovative and was so much fun to watch on TC. I am amazed by molecular gastronomy and would LOVE to eat something that he has made. Ina Garten because she creates mouth-watering recipes that even a home chef wannabe like me can follow and make absolutely delicious foods everytime.
My favorite recipe of hers (I’ve made several times) is her Roasted Brussel Sprouts. I normally do not eat brussel sprouts so this is another testament to her craft.
Lisa Lillien (the “Hungry Girl” author) because she always has great, simple and usually relatively low-calorie ideas for desserts and entertaining foods. I use one of her cookbooks ALL the time but one of my favorites is called “Kickin Chicken Pot Pie”. Usually loaded with calories, this is the scaled-back version so that you can enjoy the essential flavors of pot pie without all the fat and sodium. Yay Lisa!
Hi Lindsey! My very favorite chef is Joy Wilson of Joy the Baker. Her shrimp & grits are killer and she’s just adorable and currently on tour for her new cookbook. This sounds amazing! My favorite celebrity chef would be Mark Bittman – he is really a cook! He used to write for the NYTimes until Jan. 2011 and he is a prolific author – He’s known as the minimalist. I love him because he talks to home cooks – my favorite and most used recipe of his is for tomato sauce – this was the first recipe that opened up the world of home-made food for me. My favorite celbrity chef is Thomas Keller of The French Laundry and Bouchon. Chef Keller is legendary for the exquisite care with which he crafts his dishes which are models of simplicity, purity, and even whimsy. I’ve never had the privilege of eating his food but I would strongly consider selling my sister into slavery if that were the price of his chef’s tasting dinner.
From his bistro-style restaurant, Bouchon, he has a sublime Macaroni and cheese which calls for a Mornay Sauce
Thomas Keller’s Macaroni Gratin (Grati de Macaroni)
Serves 4
Thomas Keller, “A standard dish in bistros, not to mention an American favorite – macaroni and cheese. This version is tossed with a Mornay sauce seasoned with nutmeg, sprinkled with thyme and bread crumbs, and baked until bubbling and crispy on top.”
Mornay Sauce Recipe
Makes 3 cups
Ingredients
4 tbsp unsalted butter
2/3 cup diced Spanish onion
Kosher salt
1/4 cup all-purpose flour
2 2/3 cup milk
1 1 /3 cup heavy cream or as needed
1 bay leaf
4 black peppercorns
4 whole cloves
Freshly ground nutmeg
Freshly ground white pepper
1/2 cup grated Comte or Emmentaler cheese
Method
Melt the butter in a large heavy saucepan set on a diffuser over medium heat.
Add the onion and a pinch of salt and cook slowly, stirring occasionally, for 2-3 minutes, or until the onion is translucent.
Sprinkle in the flour and cook for about 3 minutes, stirring constantly so that the roux doesn’t burn or color.
Whisking constantly, add the milk and cream and whisk until fully incorporated.
Bring to a simmer, whisking, then add the bay leaf, peppercorns, and cloves.
Move the pan to one side of the diffuser, away from direct heat to avoid scorching, and bring back to a gentle simmer. Adjust the heat to maintain a gentle simmer and cook, whisking occasionally, reaching into the corners of the pan, for about 30 minutes. (If the sauce does begin to scorch, pour it into a clean pan – don’t scrape the bottom of the pan – and continue).
Remove the sauce from the heat and season to taste with salt, a grating of nutmeg, and a pinch of white pepper.
Strain the sauce, add the cheese, and whisk to melt.
Use immediately, or place in a storage container, press a piece of plastic wrap against the surface to keep a skin from forming, and refrigerate for up to a week.
If the sauce is too thick after refrigeration, it can be thinned with a little heavy cream.
Macaroni and Cheese
Ingredients
8 ounces small elbow macaroni
3 cups Mornay sauce
Heavy cream (if needed)
1 cup sauteed wild mushroom or 1/2 cup julienned Bayonne ham (optional)
Kosher salt and freshly ground white pepper
Fresh grated nutmeg
2 to 3 tsp minced thyme
1/2 cup grated Comte or Emmentaler chesse
2 to 3 tbsp panko (Japanese bread crumbs) or dried bread crumbs
Bring a large pot of salted water to a boil. Add the macaroni and cook until tender; drain, rinse under cold water, and drain on paper towels.
Meanwhile, put a rack in the top third of the oven and preheat the oven to 400F.
Warm the Mornay sauce in a large saucepan over low heat. If the sauce has been refrigerated and seems too thick, thin it with a little additional heavy cream. Remove from the heat and add the macaroni and mushrooms or ham, if using Mix well and season to taste with salt, pepper, and nutmeg.
(The mixture may look loose, but the macaroni will continue to absorb sauce and it will thicken as it bakes.)
Pour into an 8-cup gratin dish, such as a 9-by-15-inch oval, or into individual gratin or baking dishes. Sprinkle the top with the thyme, cheese, and bread crumbs.
Place the gratin dish(es) on a baking sheet in order to catch any sauce that may bubble over, then place in the oven. Turn the heat down to 375F and bake for 15 to 20 minutes, or until the mixture is hot and bubbling around the edges. If the gratin has not browned, turn on the broiler to brown the top.
One of my many favorites is Alton Brown, because he can simplify and make accessible even daunting culinary feats. I offered this past year to take over roasting the Thanksgiving turkey from my grandparents, who, after 50 years of hosting Thanksgiving, were delighted to have a break. I think they were a little nervous about letting the 25 year old grand daughter roast the turkey, but thanks to Alton’s fabulous turkey recipe (http://www.foodnetwork.com/recipes/alton-brown/good-eats-roast-turkey-recipe/index.html), it turned out wonderfully.

My favorite celebrity chef is Giada De Laurentiis. I have a strong passion for italian cooking, partially because it seems to pair so well with wines. I find Giada’s recipes very easy to follow that even a novice like me can fake a gourmet dinner, and well, she’s not difficult to look at either. One of my fave recipes is her pork chops stuffed with sun-dried tomatoes and spinach paired with a nice Gewurztraminer.

My favorite celebrity chef is Carla Hall, a chef who I believe, if she lived in the NRV, would fit right in on the line at the Pallisades.
I used to live in the Washington, DC area where Ms. Hall works, a place where inflated egos and wannabes are in no short supply. Ms. Hall, however, is the real deal. Not only can she cook up inventive fare as well as anyone in the business, she does so without pretense, and she’s a completely approachable person, always willing to chat with a fan or answer a question.
I saw her once at the farmers market in Riverdale, MD. If Eggleston ever had an urban twin, it would be Riverdale, a place on the ‘wrong’ side of the city where if you don’t live there, you wouldn’t think to go there. Like Eggleston, there’s not anywhere close to buy good health food. Yet there was Carla, a bona fide celebrity, cooking yummy meals with what could be bought at the market, patiently talking with anyone who wanted to chat. She was just a person who liked to cook and wanted to share what she knew with other people who liked to cook.
I got a similar feeling the first time I walked into the Pallisades after moving to the area last year. Why can’t we have great food in places where we might not expect it?

This is such a great contest! My absolute favorite celebrity chef is Julia child, mostly because her life and attitude are so inspirational and I absolutely love her outlook on life. Wow!!! Without a doubt, my favorite chef is Kevin Gillespie. Kevin is a Southern boy through and through and his love and kindness come through in his pork belly. Never in my life could I imagine something tasting so good. Ironically, Kevin was on the same series of Top Chef as was Jennifer and Mike. My husband and I were so happy for Kevin (despite losing) that he surprised me with a 10 year anniversary trip to Atlanta to eat at Kevin’s Woodfire Grill. It was magical. If you can be a foodie on a budget, then that’s me. Everyday I say that I wish I could just cook one “Top Chef” or “Gourmet” or “Fine Dining” meal. So, to be in this close proximity with these amazing chefs would be a chance of a lifetime. So proud of the Palisades and the exposure is getting. I would even wash dishes!

My favorite celebrity chef is Giada De Laurentis. I love her recipes as she keeps them simple and food as close as possible to its natural state. I make it all the time, it is a go to appetizer in our house. Creamy, earthy flavors but low fat and everyone loves it including our children. Despite her latest battles and detractors, my favorite celebrity chef is still Paula Deen. She cooks the foods that I grew up enjoying in Southwest Virginia, and it’s so comforting to me just to watch her show. She is so friendly and warm on her show that it’s hard not to feel happy when watching her cook. And who doesn’t appreciate a great Southern drawl? I also appreciate Paula’s humble beginnings and the fact that she strived for a better life for her family.

I would love to be able to watch a Top Chef unrehearsed and unedited. To see what it is really like in the kitchen with them. My favorite Celebrity Chef is Guy Fieri from Food Network. Guy’s recipes are easy to follow and cook friendly. His shows are not only entertaining but they provide great cooking knowledge. My favorite y Guy is Mojito Chicken.

One of my favorite celebrity chefs is Paula Deen. Her recipes contain ingredients that I have heard of and that I can find around here. She has received a lot of bad press about her way of cooking but you can make a lighter version if you want. One of my favorite recipes is her old-fashioned meatloaf – which is usually not something I like, but I love this recipe.

Kevin Gillespie is my hometown celeb chef fave–I’ve loved eating his cuisine for years and when he competed on Top Chef a few years back it was great to see fresh ingredients used in atypical ways. The vegetarian challenge on that season was a great one–he really proved that with technique and great ingredients (kale, mushrooms, etc.) you can make a hearty and elevated vegetarian dish. My favorite celebrity chef is Nigella Lawson from the Cooking Channel. She seems to put a different twist on classic recipes like hummus.(I emailed you her recipe called Nigella’s Globetrotting Badenjam Dip. The combination of roasted eggplant, yogurt and pine nuts make a divine dip. ) She is a British best-selling author of Nigella Express: Good Food Fast, Feast: Food to Celebrate Life, Forever Summer, Nigella Bites, How to Be a Domestic Goddess and How to Eat. I love it when she goes to the fridge late at night for a “midnight Snack”, something we all do !! Patrick O’Connell of the Inn at Little Washington has to be my favorite chef – he is truly the Pope of American Cuisine and his accomplishments at the Inn his advocacy and involvement with Relais & Chateau as well as his occasional TV appearances are a testimonial to his life work. Seeing him in person in his kitchen is beyond compare.
My favorite recipe (for home) from him is “Scalopine of Chicken with Grapefruit and Pink Peppercorns” from his book Refined American Cuisine (page 159). While the link for this is not online (and I’m not too sure on copyright), it is readily available and the Roanoke Libraries have a copy available as well.

Ammending my comment to add my “why”; my favorite celeb chef is Mario Batali. He explains in detail foods from all regions of Italy in a simple, pleasing way that encourages home cooks to try complicated (or not) dishes or new ingredients. I like making some of his more complicated items but one of my favorites is a simple dish of eggs baked in tomato sauce.

I love Alton Brown! His Thanksgiving Turkey brine is the easiest and the best. It is so flavorable! I have used it every year for about 6 years. I am also in love with Jim Lahey but I’m not sure if he is considered a “celebrity chef”.
My favorite celebrity chef is Rachael Ray because she is always upbeat on her show and has a lot of quick and simple recipe options. Her show is so fun to watch and I’ve picked up some good tips. I really enjoy Pad Thai and listed Rachael’s Pad Thai recipe below because it is simple to make and tastes great.

Ina Garten is my favorite celebrity chef. Her recipes range from easy to difficult, so they always keep my interest. And of course, they’re always delicious! She also introduced me to roasting vegetables, and now, that’s just about the only way I’ll eat them. So yummy!
One of the first, and best, of her recipes that I’ve made was her blueberry crumb cake. In fact, I think I’ll make it this weekend!

It is so hard to pick just ONE celebrity chef as there are so many to choose from! Despite his amazing competitors, Richard Blais has always been one of my favorite to watch. I love how he can take a classic and elevate it to the next level or reinvent it using some of his molecular skills. No matter what he is cooking, he pulls you in by the love and care he treats each ingredient with. I am by no means a chef and I do not have the skills or training to pull off some of his dishes, however, he inspires me to take an ordinary dish and make it new. The below is just an example of how he can kick up a burger to the next level with new ingredients that anyone at home can do.
