Occupation: Retired high-tech sales account representative with Sun Microsystems Inc. Now I have a food and entertaining blog, Karencromwell.com. My laptop and camera are always on my kitchen counter.

Why I love cooking: I’m in my kitchen cooking all the time, and I love having my family and friends helping me or just relaxing and talking at the kitchen bar. Cooking brings out the creative side in me, and I love creating and trying new dishes.

    Lindsey,
    I made this soup a few weeks ago and it is phenomenal!

    I roasted the peppers after grilling steaks for dinner one evening, while the coals were still hot

    Full of vegetables and flavor. I froze some extra containers for quick lunches, and it is great with freshly shaved parmesan cheese and sour cream as a garnish. I added the garlic croutons as well.

    I found that this soup makes a great low calorie, filling meal, either for lunch or dinner.

    Fantastic and I can’t wait to make it again. Kudos to Karen.
