If you wanted to win this book but did not, I have good news for you. And it’s better news than the standard “You can find this online at blah blah blah.” This book, in fact, is available for sale at any Kohl’s department store or at Kohl’s online for only $5. All of the proceeds go to national children’s health and education initiatives. You may have heard about the Kohl’s Cares program. Well, this is part of that program.

I shared some recipes from this cookbook on my blog the other day, and I’ll share one more now for Coconut Cream Yogurt Pops. Hope you all enjoy!

Coconut Cream Yogurt Pops
Makes six 8-oz. pops

1 1/2 cups sweetened shredded coconut
3 cups vanilla yogurt
1/2 cup milk
1/3 cup plus about 2 Tbsp. honey

1. Preheat the oven to 350 degrees. Spread the coconut on a baking sheet and toast for 7 minutes.

2. In a blender, process the yogurt, milk and 1/3 cup honey until smooth. Stir in 1 cup of the toasted coconut.

3. Pour the yogurt mixture into pop molds. Insert the sticks and freeze for at least 8 hours.

4. When it comes time to serve, dab some of the remaining honey onto the pops and pat the remaining coconut onto the pops. Serve immediately.

    Okay, I know this has nothing to do with today’s blog, but I’d like to share something with you and your readers. Sunday we went to Fiji Island for dinner for Mother’s Day. It was a very disappointing meal. The crab rangoon just tasted like onions – no crab, cream cheese or anything else – just like onions in fried wonton skins. The Peach Blossom Duck was simply a duck breast sliced and placed on a bed of lettuce, then topped with 2 canned peach halves…not very good peaches either. The plum sauce was burnt and I can’t even discribe the texture without gagging. We ordered Bananas Flambe for dessert and what we received were plates of melted ice cream with a half banana split and a brown sugar sauce with cinnamon. It appeared that the “flambe” was finished prior to the dishes being served. I guess if you like a plate of warm melted ice cream puddles, it was okay. The waitress seemed like a sweet lady, but she needs to find another line of work. When I told the manager about the meal, his response was, “Corrections will have to be made,” as he didn’t even look at us, but perused a register print-out. We will not be going there again and I definitely will not recommend it to anyone else.
