The problem with beans is that they can be used to mask bitterness and other unwanted flavors so a less skilled chili cook can improve the flavor of a bad batch of chili by throwing a bunch of beans into it. The unwanted flavors are masked, but a bad batch of chili is still a bad batch of chili and that is also one of the reasons why in most sanctioned chili cookoffs, beans are verboten because it allows badly prepared chili's to judge much higher than they otherwise would without the beans which is really unfair to the cooks who know what they are doing and don't use beans.

No beans... after all, that's what chili is about.

I don't mind beans in the "southwest-style thick chili powder meat stew", though.

But it's not just Texas. In New Mexico, they don't want beans in their green chile stew, either.

If you are going to do beans, use black beans, they just taste better, and don't get so mushy and ruin your southwest-style stew.

To take the gas out of beans: bring them to a boil in lots of water and let them sit overnight. In the morning, rinse & rinse - then cook as usual. No gas.

Also I have a chili recipe with black-eyed peas and breakfast sausage and it's wonderful.

It's not that the packets of seasonings aren't tasty, but rather that they do typically contain nasty ingredients like MSG, etc.

The thing is, for an equivalent price, you can blend your own seasonings, and actually own your recipe. The person who knows how to roast their own chicken is far more knowledgeable than the person who buys the $5.99 pre-roasted chicken at the grocery store. The same goes for the person who blends their own seasonings.
