Here is an easy weeknight gumbo recipe. You could leave out the shrimp and use low fat sausage: http://blogs.roanoke.com/fridgemagnet/2012/11/easy-weeknight-recipe-and-a-scrapple-question/

The Autumn harvest chili at this link is a slow cooker recipe, but you could adapt it to the stove top: http://blogs.roanoke.com/fridgemagnet/2012/10/autumn-crock-pot-recipes/

Here is a nice smoky vegetarian black bean soup: http://blogs.roanoke.com/fridgemagnet/2011/12/spice-up-your-weekend-with-my-smoky-vegetarian-black-bean-soup/

Thank you for the congrats and suggestions, Lindsey. Husband eats shrimp, I dont, so I'll pass on that one. The frittata looks very good, think I will try try that, but I will leave out the potato because of the carbs. Any more healthy soups and/or chicken dishes??? Would love to make a few things Sunday while my husband is watching football. I want to go into my kitchen, crank up the radio(92.3)and do some serious cooking!!

Congratulations on your weight loss, Denice. That is extremely hard to do, so you and your husband deserve to be very proud of yourselves.
You say you don't eat fish, but do you eat shrimp? If so, this is a good and easy recipe: http://blogs.roanoke.com/fridgemagnet/2013/01/try-this-recipe-orange-shrimp/
And here are some other healthy/tasty meals. You should try the frittata:

I very rarely cook..though I bake a lot for others..and stay away from carbs and sugar. My husband lost 92 pounds doing so and has kept it all off (he started doing that in Sept of 2011 and lost it in about 5 months)and I started in August of 2011 and lost 35 pounds and have not cheated once and kept it all off too). That said, after making the delicious Julia Child onion soup, and not only enjoying the taste but the thrill of making something successful (I can't tell you how many meals in my 28 yesr marriage that I have tossed because no one can eat it or stand the smell..lol), I have decided that I have found a new interest in "cooking" and have decided I would love to explore some recipes that don't have to be "easy"...just healthy and good. I actually enjoyed spending the time in the kitchen so it can be complicated!! (We don't eat fish either). Any ideas for something I can make this weekend that will make my husband doubt that I made it???

Rachael Ray's recipes tend to be the EZ Button of recipes - in which I mean they are great for people who are not afraid of food and want to fix a 'different' meal than the same ole same ole, but not take hours to do so.

Other contemporary and historical cooking people offer better recipes, but also the recipes take more time.

Personally, I have found that - in no particular order: Ina Garten/Barefoot Contessa, Mario Batali, & Jamie Oliver all offer extremely tasty, extremely healthy, very easy to understand, and quite convenient recipes that even the timid can accomplish.

Rachael fits her niche, as do the others in their own niche. The difference is that learning the recipes of the other three takes minimally more time, and offers exponentially more compliments. It's all your choice.

I honestly think I’m going to attempt to cook all the way through this list. :) I'm a beginner as far as cooking is concerned looking for some new inspiration and I've recently read an article on the best cookbooks so I decided to buy one of them. But visiting your blog seems to be a better way to discover a number of wonderful recipes and accumulate considerable experience in this particular area. I'm looking forward to reading your posts in the weeks to come.

I'm so glad to hear that, Denice! Julia beats Rachael Ray anytime :-) I didn't think I liked French onion soup until I was an adult. My husband encouraged me to try it and this recipe was the first one I tried. It's superb.

About 2 weeks ago I made Rachael Ray's onion soup and none of us in my family liked it. I had never tried making an onion soup before, and decided never would again after that. Today I made Julia Child's onion soup recipe that you listed to try for 2013 because the newspaper was just staring me in the face and just looked so good. IT WAS DELICIOUS!! The only changes I made (we don't do sugar or white flour) was to substitute Stevia and wheat flour. I never would have tried this recipe if I hadn't seen it in the paper. I can't wait to make it again!
