Just a reminder that you have until noon tomorrow (Friday, Aug. 16) to enter my latest cookbook giveaway.
The book is “Six o’Clock Solutions” from Southern Living magazine. Who doesn’t need some ideas for easy, fast, delicious weeknight dinners?
Here’s another recipe from the book to tempt you:
Country Ham and Peach Panini
8 ciabatta bread slices (or any firm white bread)
4 tsp. coarse-grained Dijon mustard
Freshly ground black pepper
4 slices fontina cheese
4 oz. thinly sliced country ham, prosciutto or serrano ham
2 medium peaches, unpeeled and sliced
4 tsp. honey (optional)
1 Tbsp. extra virgin olive oil
1. Spread each bread slice with 1 tsp. mustard, then sprinkle with pepper. Layer with cheese, ham, peaches and, if desired, honey. Top with remaining bread slices and press together gently. Brush outsides of bread with oil.
2. Cook sandwiches in batches in a preheated panini press for 3 to 4 minutes, or use a preheated nonstick grill pan and cook sandwiches over medium heat for 3 to 4 minutes per side (you may use the bottom of another pan to press the sandwiches as they cook, if desired)
