Blue Collar Joe's to open this summer

The old Citgo station in Daleville is being transformed into a coffee and donut shop with on the go sandwiches as well. Blue Collar Joe's also reflects owners Daniel and Pru Knight's commitment to dog rescue.


Q: So why did you name it Blue Collar Joe's?
Knight: Well, it reflects hard work and our affection for dog rescue.
We are "Six Dogs, LLC." Our motto is "Uncommonly good treats for a hard working world."
Q: So you and your wife are into dog rescue?
Knight: We have six rescue dogs of our own. We also help transport rescue dogs up and down I-81. We've probably helped with over 200 dogs. We plan to have a board that will have pictures and lists of dogs for adoption here inside. So while you wait for your order, you might look at the board.
Q: What's on the schedule?
Knight: We will be open this summer. Right now we are getting the interior ready and we will have a drive through coffee and donut service under the old gas canopy. We will sell donuts, coffee, ice cream and smoothies inside and plan to build a deck for seating outside along the creek after we get open.
Q: So right now there is no seating?
Knight: No (points to the interior) it is rather small.
Q: Anything else you plan to offer?
Knight:Yes, we will be making fresh sandwiches every day and keep them in a refrigerated case for people to grab and go.
Q: Have you been in food service before?
Knight: Oh, yeah. I started in dish washing at Ocean City, Maryland when I was 13. I have been in food for 15 years. All the way to management.
Q: What else would you want the public to know?
Knight: After we get open and are making money, we plan to donate a portion of our proceeds to the LAP and Pet Rescue. My wife Pru is a graduate of LBHS -- She was Pru Lucas then. We've been here in Botetourt for the past eight years. I am originally from Pennsylvania.
